Lonza or Coppa stagionata Sorrentino is a sausage in natural gut with the size of about 1.350 kg.
It is a product with a sweet and spicy taste, sold loose whole.
Also available in a version with hot pepper (to be requested when confirming the order).
Sorrentino Seasoned Lonza or Coppa has characteristics that make it unique:
- The meat used comes from in-house slaughtering and the anatomical part is processed from fresh, without temperature alterations.
- Trimming and cleaning take place from fresh and are performed by master butchers; after this processing is completed, it is massaged and amalgamated with natural spices. After this operation it rests for a week to absorb the flavors and aromas that will give it that unmistakable flavor.
- Subsequent flavoring with spices is done strictly by hand, to ensure uniformity over the entire surface of the product.
- At the end of the process, the slow curing allows to have an excellent result and an incredible product, excellent both for cooking (appetizers, dishes) and to be enjoyed as a simple sliced, in line with the flavors of the past and in the perfect norcina tradition of the Sorrentino family.
