Original Ventricina Abruzzese in Bladder by Sorrentino: a historic cured meat typical of the Abruzzo tradition, specifically from the Vastese area, easily recognizable by its unique "ball" or "flask" shape. This salami, produced in natural casing, weighs approximately 1.4 kg and differs from Ventricina Teramana, which is soft and spreadable.
Ventricina is a prized salami, passed down through generations of farming families and cherished since the Bourbon era. The authentic recipe uses lean cuts of ham, loin, tenderloin, and pork belly, enhanced with natural seasonings such as salt, garlic, ground pepper, and wild fennel. The meat is flavored with a blend of local sweet peppers from Altino, an Abruzzo town renowned for this product and its annual festival dedicated to it.
After resting for 48 hours, the mixture is stuffed into natural casing; traditionally, the pig’s stomach was used, giving Ventricina its name. The curing process takes at least 30 days, during which the salami develops its distinctive reddish color and uneven texture, showcasing chunks of meat and fat.
The bold flavor of Ventricina is a perfect balance of pork and spices, particularly the local natural sweet chili. Recognized as one of Italy's finest salamis, Ventricina Abruzzese is a symbol of local gastronomy and Abruzzo’s culinary tradition.
